This program has evolved from a traditional classroom learning experience to a comprehensive program that teaches the fundamentals of the food service industry and gives students the skills necessary to obtain employment in a variety of food service and related careers. As part of the curriculum, students participate in experiential labs to learn professional cooking and baking.
To strengthen the link between prison and community, the instructor teaches important transition skills along with classes in safety and sanitation, nutrition, menu planning, and principles of food. More importantly, this program gives students comprehensive and valuable experience in culinary arts and hospitality by simulating a real café within the prison walls. This allows students to practice what they learn while providing nutritious meals to officers and staff.
